🌈 Rainbow Yogurt Bark (Kid-Friendly & Fun!)

Healthy frozen treat made with yogurt, fruit, and fun toppings! My kids love helping wash and chop the fruits and putting them organized to make the rainbow. It is a fun way to get the kids involved and empower them to make healthier food choices.


Why It’s Great for Kids:


Interactive & fun – Let kids arrange the fruit!

Nutritious – Packed with probiotics, vitamins, protein, calcium and fiber.

No artificial colors – All-natural rainbow fun!

Perfect snack or dessert – Great for lunchboxes or summer treats.


Ingredients:

• 2 cups Greek yogurt (or coconut yogurt for dairy-free)

• 1-2 tbsp honey or maple syrup (optional)

• ½ tsp vanilla extract

• ½ cup strawberries or raspberries (red layer)

• ½ cup mango or pineapple (yellow layer)

• ½ cup kiwi or green grapes (green layer)

• ½ cup blueberries (blue layer)

• ½ cup purple grapes or blackberries (purple layer)

• 1 tbsp chia seeds or shredded coconut (optional for texture)


Instructions:

1. Prepare the yogurt: In a bowl, mix yogurt with honey (if using) and vanilla extract.

2. Spread it out: Line a baking sheet with parchment paper and spread the yogurt evenly.

3. Add the rainbow: Arrange the chopped fruits in colorful stripes to create a rainbow effect.

4. Sprinkle on extras: Add chia seeds or coconut for extra crunch.

5. Freeze: Place in the freezer for at least 3-4 hours until fully set.

6. Break into pieces: Break into chunks and enjoy once frozen!



For added calories and protein:

Add a drizzle of nut butter, melted chocolate or sprinkle of hemp hearts.
